Assistant Kitchen Manager
 
The Assistant Kitchen Manager serves as a Customer Service Ambassador. The Assistant Kitchen Manager ensures that all operations of the kitchen comply with Fudpucker standards of excellence. The Assistant Kitchen Manager is responsible for the speed, organization, and accuracy of the team.  The Assistant Kitchen Manager will demonstrate leadership and maintain a positive work environment.  The position requires food safety excellence.  The Assistant Kitchen Manager position is responsible for hiring, training and supervising employees to perform successfully.  The Assistant Kitchen Manager will assist with produce ordering, inventory, and daily management of labor cost and food cost control.  The Assistant Kitchen Manager will assist the Kitchen manager as well as front of the house management with any extra duties that may be requested. 

ESSENTIAL FUNCTIONS: 

·         Ensures that all food items are prepared and presented in accordance with Fudpucker recipes, portions, and quality standards. 
·         Manage kitchen staff and coordinate food orders 
·         Supervise food prep and cooking 
·         Check food plating and temperature 
·         Establish portion sizes 
·         Schedule kitchen staff shifts 
·         Price menu items in collaboration with the Restaurant Manager 
·         Order food supplies and kitchen equipment, as needed 
·         Train kitchen staff on prep work and food plating techniques, taking care to avoid food waste 
·         Store food products in compliance with safety practices (e.g. in refrigerators) 
·         Keep weekly and monthly cost reports, partnering with the kitchen manager as needed 
·         Maintain sanitation and safety standards in the kitchen area 
·         Other duties as necessary may be assigned 
 

MINIMUM QUALIFICATIONS: 

·         High school graduate or equivalent desired. Certification from a culinary school or degree in Restaurant Management is a plus 
·         Proven work experience as a Kitchen Manager, Restaurant Manager or Head Chef 
·         Must be able to communicate and understand the primary language(s) of the work location.  
·         Flexibility to work during evenings and weekends 
·         Conflict management abilities. 
 
PHYSICAL REQUIREMENTS OF POSITION: 

1.  Must be able communicate clearly and listen attentively to supervisors, employees, and guests. 
2.  Ability to manage a team in a fast-paced work environment 
3.  Must have the ability to lift 50 pounds in weight. 
4.  Excellent organizational skills.
